Ingredients:
3 cups plain organic yogurt (low fat or whole milk)
Juice of two lemons
2 teaspoons granulated garlic
2 tsp kosher salt
4-6 boneless skinless chicken breasts, or 1-2 lbs. shrimp or beef
*chopped fresh herbs (basil, mint and Italian parsley are good choices),
optional
Process:
- Place yogurt, lemon, garlic and salt in a medium
glass bowl and mix. (You can also use a large re-sealable plastic bag).
Reserve ½ cup of mixture.
- Add chicken, shrimp or lamb.
- Marinate for 30 minutes to six hours (the longer the marinating the more
flavor to the meat and the less cooking time).
- Heat the grill to high and turn to medium before cooking meat.
- Add meat to grill and cook 2-7 minutes per side depending on meat. (Shrimp
approximately 2 minutes per side, boneless skinless breast and beef 4-7 minutes
depending on thickness).
Finish with fresh herbs and serve with remaining yogurt sauce and fresh
lemon wedges.
